One of my favorite breakfast/brunch dishes to make that I can eat without having to make anything to really accompany it because it’s packed with filing ingredients is my Stovetop Potato Bake. It’s super easy to make. The prep work is about 5-10 minutes and the cook time is about 20-25 minutes.

Stovetop Potato Bake Recipe

Ingredients:

  • 5-6 medium potatoes
  • 1 small onion (chopped)
  • 1/2 medium red bell pepper (chopped)
  • 1/2 medium green bell pepper (chopped)
  • 2 handfuls of spinach
  • 1 pack of breakfast sausage of your choice (chopped)
  • 1 cup of shredded cheddar cheese
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika

Instructions:

  1. Prep: Peel then chop your potatoes in small medium size cubes then season with salt, pepper, garlic and onion powder, and paprika. Next chop your bell peppers and sausage into small-medium pieces as well. (If using onions do the same) 
  2. In a large nonstick skillet on medium heat add 1 tbsp of olive oil. Once the oil gets hot toss in all your chopped ingredients and spinach (not the potatoes) and stir continuously so the ingredients don’t get stuck or burnt.
  3. Once the veggies have softened and/or wilted down, remove them from the pan and set aside. Now you can add the potatoes to the already hot pan and allow them to cook through (covered w/ lid) stirring occasionally so each side gets a nice color on them.
  4. Overtime you can check the potatoes to make sure it has enough salt for your liking. You can add more seasoning if needed.
  5. Once the potato medley is  fully cooked, you have the option to add the cheese on the stovetop skillet and allow it to melt then serve. I usually do this for a normal breakfast.

Optional bake step (brunch style):

6. After your potatoes have fully cooked on the stovetop, transfer them into a casserole dish then add the cheddar cheese. Being that the potatoes are hot the cheese should already begin to melt

7. In a 350 degree preheated oven add your dish on the center rack for about 10 minutes to allow the cheese to fully melt and for the potatoes to get a little crisp

8. Once that’s done you can let it slightly cool down then serve it.
