Hello my loves, I hope all is well. Today I wanted to share with you this amazing lemon rosemary chicken dish that I made earlier this week for dinner. By now you all can assume that cooking is really one of my favorite things to do. It truly just brings me so much peace and joy from prepping to completion of the meal and making this dish was exactly that.
I don’t know about you all but I loveeeee cooking with fresh ingredients. In this recipe I used both fresh garlic, lemon, and rosemary. Now rosemary and garlic are my favorite cooking herbs/spices —-they pair extremely well together and just give any dish a homey fragrant aroma and it just taste amazing.
Below I’ve attached the full recipe which is super easy, along with step-by-step instructions and pictures. This recipe is safe to prepare one day ahead for maximum flavor. I promise you’re going to loveeee making this, but most importantly how it taste! So let’s get started —ENJOY!
Ingredients:
- 1 12pk of skinless chicken drumsticks
- 1 tsp goya sazon (coriander & annatto flavor)
- 1 tsp goya adobo all purpose seasoning
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Mrs. Dash garlic & herb blend
- t tsp poultry seasoning
- 2 springs of fresh rosemary (chopped)
- 3 cloves of garlic (minced)
- 1/2 tsp lemon zest
- the juice of 1 lemon
- 1 tbsp extra virgin olive oil
Instructions:
- Clean and Rinse your chicken! This is my way but you can do it your way as well. In a large mixing bowl add your chicken, 1 cup of lukewarm water, 1/3 cup of white vinegar, 3 tsp salt, and the juice of one lemon. Mix together and let sit for about an hour. Rinse thoroughly then pat dry the chicken before proceeding to add seasonings.
- Preheat your oven at 350 degrees for 15 mins.
- Season your chicken! Add seasonings, rosemary, garlic, olive oil, lemon zest, and juice of half a lemon to chicken then rub it all in. Your chicken legs should have a nice color and aroma to them at this point.
- Arrange chicken legs in a non-stick sprayed baking dish of your choice (I used a 13×9 in dish).
- Bake chicken on the center rack covered for 1 hour, then uncover and bake for an additional 10 minutes.
- Rest and Serve. Remove your chicken from the oven and allow to rest for about 10 minutes before serving.
