Happy Friday Eve! I hope this week is being good to you all, but if not then look at the bright side, you have just one more day until the weekend! And if you’re on the east coast, the weather (although it keeps changing) is supposed to be nice (temperature wise). As you should know by now, I am fasting using the Daniel Fast method. Being that I am unable to eat meat or any other animal product during this time, I have to be creative with my meals. Now what you see pictured is my Spinach Medley Penne which is literally a dish I put together in minutes simply using what I had in my fridge. It turned out to be a pretty good meatless, but filling meal. So lets get into it; the recipe details are listed below.

Ingredients:
  • 1 box whole grain penne pasta
  • 5 cloves of garlic (minced)
  • 1 small onion (chopped)
  • 1 small red or green pepper (optional)
  • 1 bag of spinach
  • 1/2 shredded carrots
  • 1 c of sweet corn (canned, fresh, or frozen)
  • 6 red cherry tomatoes (sliced in half)
  • 1/3 c olive oil
  • 1 tbsp salt (or your desired amount)
  • 1/2 tbsp pepper (or your desired amount)
  • 1 tbsp Mrs. Dash
Instructions:

This meal is so quick and easy the most time you’ll spend on anything is waiting for the penne pasta to cook.

  1. In a pot you want to bring 4-6 quarts of water to a boil (make sure to season your water with salt to give the pasta some taste). Once it begins to boil, add your pasta and let it cook for about 8-10 minutes. Once your pasta is done, you can drain it then set it aside until it’s time to add it to the skillet (add about 1 tbsp of olive oil to prevent the pasta from sticking to each other).
  2. Next in a skillet set on medium heat add your olive oil. Once the pan gets to sizzling, add in all your produce/veggies: minced garlic, chopped onions, chopped peppers, spinach, shredded carrots, sweet corn, and sliced cherry tomatoes. Stir and allow them all to cook down..
  3. Now once your spinach has wilted down, you can carefully add in your pasta, Mrs. Dash, salt and pepper, then gently stir everything so that the pasta can marry into the cooked veggies and get all that flavor.
  4. After giving it a good stir and toss, you can reduce your heat and let the pasta sit for about a minute or two before turning the stove off completely.
  5. Allow it to cool for about 5-10 minutes before you eat and/or serve.
