These overnight oats are a staple for me when dieting and with just a few tweaks to make it plant base friendly, I was able to enjoy it as a breakfast option during for this fast. The recipe and instructions are listed below.

Ingredients:
  • 1/2 c old fashioned oats
  • 1 c unsweetened almond milk
  • 1 small apple (or half of a large) chopped
  • 1 tbsp of cinnamon
  • 1/2 tsp of vanilla extract
Instructions:

The night before in an 8-9 oz mason jar or cup/bowl with a lid, add in order: the cinnamon, chopped apple, old fashioned oats, then milk and vanilla extract. If you have a few more apples left you can add them to the top for garnish. Now just twist on the lid and do a quick shake to marry all the ingredients together, and you’re all set and ready to put it in the fridge until the morning when it’s ready to eat!
